2 c. (8oz) any type shredded cheese
2 c. Shredded or diced leftover chicken
2-3 tbsp. chopped onions (optional)
1 c. salsa any type
5-6 soft tortilla shells (approx. 2 per person)
1 c. (1/2 pt.) Heavy Cream

Directions:
Directions:
In a bowl combine 1/2 cup cheese, chicken, onion and salsa.
Spoon about 1/2 c. of mixture off center on each tortilla; roll up. Place seam side down in a greased 9x9 baking dish.
Pour cream over all, (additional cream may be used to cover enchiladas) cover with foil and bake at 350 degrees F for 20 minutes.
Uncover sprinkle with remaining 1 1/2 c. cheese.
Bake uncovered 5 minutes longer or until cheese is melted. Let stand for 5 minutes before serving.

Double and place in a 9x13 baking dish, may need 5-10 min additional baking before adding cheese.
