1 1/2 c. all-purpose flour
1 tbsp. white sugar
1/2 tsp. baking powder
1/2 tsp. salt
2 c. milk
2 tbsp. butter, melted
1/2 tsp. vanilla extract
2 eggs (beaten slightly)

Directions:
Directions:
In a large bowl, sift together flour, sugar, baking powder and salt. Stir in the remaining ingredients; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approx. 1/4 cup for each crepe. Tilt the pan in a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula- rubber scraper (heat tolerant), turn and cook the other side slightly. Stack the finished crepes by putting wax paper between each one. Keep covered with a dry cloth until ready to eat.

These crepes are very easy to make but are so exquisite you can use your imagination. Serve them everyday for breakfast or snack just spread on a little jam, your favorite dessert filling or try them with ice cream. Having special guests serve them homemade Cherries Jubilee.
