Ingredients: 6 egg whites 1/2 tsp. cream of tartar 1/4 tsp. salt 1 3/4 c. sugar
1 - 8 oz. pkg. cream cheese 1 c. sugar 1 tsp. vanilla 2 c. heavy whipping cream, whipped 2 c. mini marshmallows 1 - 21 oz. can cherry pie filling 1 pkg. frozen strawberries

Directions:Heat oven to 275º. Grease an oblong pan (9" x 13"). Beat egg whites, cream of tartar, and salt until frothy. Gradually beat in 1 3/4 c. sugar. Beat until very stiff and glossy. Spread in pan and bake 60 minutes. Turn off oven and cool overnight.
Mix cream cheese with 1 c. sugar and vanilla. Gently fold in the whipped cream and mini marshmallows. Spread over meringue and refrigerate 12 hours or overnight.
Mix together cherry pie filling and frozen strawberries. When serving, cut the dessert into squares and serve fruit mixture over it. Garnish each with a mint leaf. |

Notes: This is an old recipe that I have served many times for large groups. You do have to plan ahead because of the overnight steps. I serve it in a crystal sherbet goblet. You can use 2 c. of sliced fresh strawberries instead. I have added sliced fresh peaches also.
