Ingredients: 3 eggs 1 cup sugar ½ cup brown sugar ½ cup butter or coconut oil 1 small apple or ½ larger apple (approx. ½ cup of apple pureed with the beets or just use unsweetened applesauce) 1 tsp. vanilla 2 cups pureed, steamed beets (about 6 good-sized beets, steamed 20 min. then peeled & chopped) ¼ cup baking cocoa 2 cups oat flour (I grind my own again in my vita mix, you could also use wheat flour but prefer oats. Whatever you do, just use anything but refined white flour!) 1 ½ tsp. baking soda ½ tsp. sea salt
Frosting: ½ cup unsweetened cocoa powder 1 cup butter, softened (or coconut cream concentrate, softened) 1 cup powdered sugar

Directions:Preheat oven to 350º Puree steamed beets (and apple if you’re using a whole apple) in blender or food processor or even just mash them up well with a potato masher; add eggs, sugars, butter, and vanilla and run blender on low until mixed in. Add chocolate and other dry ingredients, blend until smooth. Pour in 9" x 13" oiled pan and bake at 350º for 30 minutes. Cool.
For the frosting cream together: ½ cup unsweetened cocoa powder 1 cup butter, softened (or coconut cream concentrate, softened) 1 cup powdered sugar
Frost cooled cake and serve |

Notes: This is a "heart healthy" recipe. People will be fooled by the amount of beets in the cake! Also, using the coconut oil and cream options in the cake and frosting might be better choices because coconut is high in medium-chain triglycerides which can be better than the long-chain triglycerides found in most other fat sources.
