5 lb. Pork Roast
2 1/2 tbsp. paprika
2 tbsp. salt
2 tbsp. garlic powder
1 tbsp. black pepper
1 tbsp. onion powder
1 tbsp. cayenne pepper
1 tbsp. dried oregano
1 tbsp. dried thyme

Directions:

Mix ingredients for the rub and massage into the meat. Let it stand for 2 hours until the roast is at room temperature. Smoke at 200º on indirect heat until it reaches an internal temperature of 170º. If the meat is too rare, wrap tightly in foil with some liquid (beer, water, apple juice, BBQ sauce) and cook it in oven at 175º. Let stand before slicing and serve with your favorite barbecue sauce.
