2 chickens, boiled and deboned (save the broth)
12 oz. thin spaghetti
2 medium onions
2 green peppers
1 stick oleo
2 lb. box Velveeta cheese, cubed
2 cans Rotel tomatoes & green chilies
4 oz. mushrooms, drained and sliced (2 cans can be used)
Sliced almonds, if desired

Directions:

Cook spaghetti in chicken broth, drain and set aside. Chop and sauté onions and peppers in oleo. Melt cheese in with onions, pepper and oleo mixture. Add Rotel tomatoes and mushrooms. Mix all in with spaghetti and chicken. Fill two each 9” x 13” pans. Sprinkle with sliced almonds. Bake at 350 degrees for 30 to 45 minutes.
