Ingredients: In a slow cooker for every 2-1/2 to 3 pounds of chuck roast add: 3 C. water or beef broth 2 envelopes of Italian Dressing Mix 1/2 t. oregano 1/2 t. basil 1 t. parsley
Onion and bell pepper if desired Hoagie rolls or buns Provolone Cheese

Directions:Place roast into the slow cooker. Put all other ingredients (except onion and bell pepper) in a heat safe bowl, heat in the microwave until hot and stir to combine. Pour over roast. If you want onions and/or peppers on your sandwich. Cut them into slices and place on top of the roast. Cook at least 8 hours on low or 4 hours on high (until tender). Remove the onions and peppers when they have cooked and set aside. At least 1/2 hour before eating, remove the roast from the slow cooker and shred the meat with 2 forks. Return to the slow cooker. Serve on hoagie rolls or buns with mayonnaise and provolone as desired. The sandwiches can be eaten au jus because this creates a rich broth. To cut down the fat, after shredding meat and returning to slow cooker, refrigerate. After it has chilled you can remove the fat from the top and reheat (chilling and reheating also enhances the flavors). |
