1/2 lb of hamburger
1/2 lb of ground sausage
4 medium potatoes, peeled and sliced
3 c. grated Cheddar cheese
1 medium onion, diced (optional)
1 can of green chilies or about 1/2 c. fresh green chilies (I also like the frozen green chilies in the freezer section of the grocery store. I prefer chilies labeled "hot")
1 to 2 cans of cream of mushroom soup (undiluted)

Mix hamburger and sausage; lightly brown in skillet until pink is gone. Pour off excess fat. While meat is browning, spray a deep casserole dish with Pam or equivalent. Lay potatoes evenly in bottom of dish. Cover and cook on "high" in microwave for 3 to 5 minutes until potatoes are crisp done. (I also add just a bit of butter before cooking in the microwave.) Mix the meat with onions and chilies. Layer on top of the potatoes. Add cheese and then end with soup on top. Cover and bake in 350º oven for 30 minutes.

I got this from a cookbook several years ago and it quickly became a family favorite. If you don't have potatoes, use hash browns. Fresh chilies taste the best, but canned will work. You can also use jalapenos. Often I doubled it and froze one. There is usually little left when we eat this!

I have made this gluten-free before. Be sure and get a brand of mushroom soup that is thick. Amy's has a gluten-free mushroom soup, not quite as thick as I would like, but still tastes good just the same.
