1-1/4 C. buttermilk
1/4 C. sugar
1 tsp. of baking powder
1 tsp. of baking soda
1/4 C. vegetable oil

Preheat skillet over medium heat. Combine all ingredients until smooth (this can be done in a blender to make it easier to pour on the griddle and for easier clean-up). Pour batter in skillet. Flip when edges appear to harden.

I originally found this recipe on Allrecipes.com - it was a 5 star recipe and I was needing a pancake recipe for my students. Seeing this was made in a blender, I thought I would give it a try. They are taste super and I have even tried making them gluten free with gluten free flour. However, you need to add Xanthum gum to the recipe - around 1 to 2 teaspoons of Xanthum gum with the gluten-free flour (experiment to get the consistency you need).
