1 1/2 lbs. ground beef
4 green peppers, whole
1/2 of an onion, chopped
2 cans tomato soup
1/4 c. ketchup or more
1/3 c. rice (can use instant)

Directions:
Set up a pot of boiling water. Cut tops off of green peppers, wash and seed peppers. Keep tops for later use. Add to boiling water and boil for 5 minutes. When done, remove to paper towel and drain well. In the meantime, brown ground beef in large skillet. Drain grease. Add 1/2 to 1 can tomato soup, ketchup, onions, and rice. Simmer for 5 minutes. Put peppers in a casserole dish so they won't fall over. Fill green peppers with ground beef mixture. Mix a can of tomato soup with 3 T. of water or a little more to make a saucy consistency. Add bits of chopped green pepper from the remaining tops. Pour over the tops of the stuffed green peppers. Bake in 350º oven for 1 hour. Spoon sauce back over top before serving.
