1 whole cut-up chicken, skin off (I use just the breasts for Jim & me and fry the rest later)
1 T. flour
1 T. peanut butter
1 Can chicken broth
2 tsp. chili powder (Amada recommends Gebhardt)
dash salt, pepper, cumin, lemon pepper

Directions:

Boil chicken til done. Cool. Debone.

Put oil in skillet to cover. Heat. Add flour to blend. Blend in peanut butter. Stir in chicken broth slowly to make creamy sauce with no lumps. Add spices, all the while stirring. Add water if needed. Add chicken and heat through. Should NOT be a dark red in color--should be an orange color. Add more chili powder if needed.
