Pie Filling:
3 T. Butter
1 c. dark brown sugar
3/4 c. boiling water
3 egg yolks (keep whites for meringue)
1 1/2 c. milk - not fat-free
6 T. cornstarch
3/8 tsp. salt

Meringue:
3 egg whites
1 tsp. cornstarch
6 tsps. sugar

Pie Filling:
Melt butter in a large pan. Add brown sugar and stir over medium low heat until the sugar turns brown. Gradually add water. Stir well and remove from heat. In a separate bowl, mix egg yolks with a small amount of the milk. Add cornstarch and stir until smooth. Pour slowly into sugar mixture and cook until thick, stirring continuously until smooth. Remove from heat and cool. Pour into baked pie shell.

Meringue:
Add cornstarch to egg whites. Beat and while beating gradually add sugar and keep beating with each addition until egg whites are stiff. Spread onto pie. Bake at 350-375º until brown on top, about 20 minutes. Store in regfrigerator.
