1/4 c. cornstarch
2/3 c. sugar
2 c. milk - not fat-free
1 egg & 1 egg yolk
1 tsp. vanilla
1/2 c. coconut
2 T. butter
Light cool whip
Toasted coconut

Directions:
Directions:
In a saucepan, mix sugar and cornstarch. Add eggs, vanilla, and 1/2 c. milk. Mix well. Add rest of milk and heat on low on stove until thick, stirring continuously. (Don't boil.) Add butter and stir til melted. Add coconut and cool. When cooled, put in 8" or 9" baked pie shell. Top with cool whip. Toast a tablespoon or two of coconut in fryng pan on stove and sprinkle over cool whip. Refrigerate.
