2 lbs. carrots
2 green onions with tops, chopped
1/2 of a large bell pepper, chopped
2 T. cooking water from carrots
1 c. Velveeta cheese, cubed
1/4 c. butter, sliced

Directions:
Directions:
Cook carrots in saucepan of water until tender. Reserve 2 T. water and drain the rest. Put the carrots in an 8x8" baking dish. Add onions and green pepper. Dot with butter. Add water and Velveeta cheese. Bake at 350º for 20 minutes.
