1 T. oil
1/2 c. chopped onions
1/2 c. chopped green pepper
1 1/2 c. rice (NOT instant)
1-2 cans chicken broth
1 can Rotel Tomatoes w/ cilantro
chili powder, to taste
cumin, to taste
garlic salt, to taste
salt & pepper, to taste

Directions:
Directions:
Heat oil in large skillet. Add onions and green pepper and sauté until tender. Add rice and cook until brown, stirring constantly. Add chicken broth, Rotel tomatoes, and small dash of seasonings. Cover. Simmer for 35-40 minutes. Do not open lid or stir rice during the cooking time.

If you want, you can use 1 can broth & 2 cans Rotel or 2 cans broth and 1 can Rotel. Experiment to see which way you like it best. You can leave the seasoning out if the Rotel has enough seasoning for your taste.
