3 eggs
1/2 c. oil
1/2 c. applesauce
2 tsp. vanilla
2 c. sugar
2 c. flour
2 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt
4 c. sliced raw apples
1 c. broken walnuts

Icing:
1 8 oz. pkg. cream cheese
1/2 c. melted butter
1 1/2 tsp. vanilla
2 c. powdered sugar

Directions:
Directions:
Heat oven to 350º. Whip eggs, oil, and applesauce until fluffy. Add vanilla. In a separate bowl, mix sugar, flour, cinnamon, soda, and salt. Add to egg mixture. Stir in apples and walnuts. Bake in well-greased and floured 9x13" pan for 40-50 minutes. It is done when a toothpick comes out clean. Cool and ice with cream cheese icing.

Beat all ingredients until well mixed.

If you don't have applesauce, you can use a cup of oil instead of 1/2 c., but it's much better w/out so much oil.
