1/3 c. melted butter
4 ripe bananas mashed
3/4 c. sugar
1 egg beaten
1 tsp. vanilla
1 1/2 Tbsp. coffee
1 tsp. baking soda
pinch of salt
1 1/2 c. flour
1 c. chopped pecans

Mix all ingredients.
Bake in 350 º oven for 20-30 min. They are done when they bounce back when you touch them or when inserted knife comes out clean.

This is Paula Deens son Michaels recipe. They are the easiest and best banana muffins I have ever found. I like them because they don't call for buttermilk. I always just use my leftover coffee that is in my pot no matter what flavor it is.
Tip: If you don't have leftover coffee, make instant.
