4 C diced apples
1 C sugar
1/2 C oil
2 eggs
2 1/4 C flour
2 tsp cinnamon
2 tsp baking soda
1 tsp vanilla
1/2 C raisins and/or nuts and/or dates (optional)

Directions:
Directions:
Mix apples and sugar, add eggs and flour, cinnamon, baking soda and vanilla. Mix well. Add nuts, raisins, dates if desired. Bake in 9 X13 pan at 350º for 45-60 minutes. Test with toothpick.

Note: Can be made several days ahead.

This recipe also makes a good fruitcake. Substitute a package of candied fruit for the apples and bake in loaf pans.

This cake is delicious. I got the recipe from a farm lady who lived down the street from us on Schooner Creek.
