Here's the guacamole recipe for your dining pleasure :-)

3 avocados
1 lime, juiced
1/2 teaspoon kosher salt (I think it needs a bit more)
1/2 teaspoon cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1 Tablespoon chopped cilantro
1 clove garlic (I think it needs two)

Slice into the avocado until you hit the pit in the middle. Twist the two halves of the avocado so one side breaks away from the pit. Remove the pit with a knife. Use a spoon to scoop out the avocado from its peel and place in a large bowl. Add the lime juice. Toss and coat the avocado pieces generously with the lime juice, then drain the lime juice into a smaller bowl and set aside.

Using a potato masher add the salt, cumin and cayenne and mash. Then, fold in the onions, tomatoes, cilantro and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for one hour then serve -- or eat immediately, which is what we did :-).
