Ingredients:

2 tbsp butter
1 medium onion, chopped
1 quart chicken stock
4 cups pureed pumpkin (plain, canned)
1 cup half and half or heavy cream
1/3 to 1/2 cup brown sugar (1/3 is usually plenty)

All the following spices to taste:

Curry
Nutmeg
Cinnamon
Allspice
Salt
Pepper
Cayenne pepper (optional - but just a pinch is really yummy)

Melt butter in a large pot over medium heat, saute onion approximately 5 minutes. Add spices, cook for two more minutes. Add chicken stock, pumpkin, brown sugar, and cream. Bring to a simmer, cook until smooth (not that long, maybe 15 - 20 minutes).

I usually use an immersion blender to smooth it out before serving. This is even better a day or 2 later.
