Bake cake as directed. Cool. Split to make 3 layers. In chilled bowl, beat 2 C. chilled whipping cream and 1/2 C. confectioners' sugar until stiff. To 1 C. stir in few drops green food color and several drops almond extract. Fill first and second layers. To 1 C. stir in few drops yellow food color and l/2 tsp. rum flavoring. Fill second and third layers. Tint remaining 2 C. with few drops red food color and stir in l/4 tsp. peppermint extract; frost top and side of cake. If desired, sprinkle top with crushed peppermint candy or anything else you wish. I usually make this cake at Easter time and put coconut and jelly beans on top.
