3 strips bacon, cut in pieces
1 chuck roast--remove as much fat as possible and season w/salt and pepper
1 onion
1 jalapeno, seeded and minced
3 Tbsp. chili powder
1-1/2 tsp. cumin
1/2 tsp. oregano
4 tsp garlic powder (or 4-5 fresh as desired)
3 c. water
1 c. beef broth
1 can Ro-Tel tomatoes
1 Tbsp. brown sugar
2 Tbsp. corn muffin mix from separate recipe.

Brown bacon pieces until crisp; reserve fat. Cut the chuck roast into 1-2 in. pieces. Add half the beef until well-browned; remove beef from pot; add second half of beef and repeat procedure. Add 1 Tbsp. rendered bacon fat, 1 onion, chopped, and jalapeno. Add 3 Tbsps. chili powder; 1-1/2 tsp. cumin; 1/2 ts. oregano; 4 ts. garlic powder and saute (if you use fresh garlic, throw that in the pot the last minute). Add tomatoes, bacon, and brown sugar. Stir. Cover pot and simmer on a low heat 2-3 hours, or until tender. Remove 1 c. chili liquid, add 2 Tbsps. corn muffin mix (see recipe in breads and muffins section of cookbook), cook in micro for about a minute. Add this mixture slowly to the beef and mix well. Cook another few minutes and serve.
