1-1/2 c. yellow corn meal
3/4 c. flour
2/3 c. sugar
1 Tbsp. double acting baking powder
1 tsp. salt
1 c. buttermilk
1 large egg
3 Tbsps. butter, melted.

Directions:
Directions:
Grease muffin pan (12 molds) or line with paper cups. In a large bowl, sift together corn meal, flour, sugar, baking powder and salt. In a separate bowl, whisk together buttermilk, egg and butter. Combine the wet and dry ingredients until just mixed. Distribute the batter evenly among the 12 cups. Bake for 20-25 min. or until a toothpick inserted comes out clean.
