1/2 lb. ground sausage (spicy Italian works well)
1 pkg. smoked sausage sliced into 1.5 inch pieces
4 cups cooked rice
1 small green pepper diced
1 small onion diced
1 can red beans drained
2 tbsp. Cajun seasoning (or more if you like it spicy!)
1 tbsp. cooking oil

Coat frying pan with oil. Brown ground sausage with onions and peppers. Add smoked sausage. Let cook for ~5 minutes on low-medium or until peppers and onions are soft. Add rice, beans, and seasoning. Simmer for another 10 minutes and serve.

If mixture becomes too thick, add water 1 tbsp. at a time until the desired consistency is reached.

Smoked sausage can be substituted for fresh shrimp, but this should be added last and only needs to cook for ~5 minutes.
