2 hard-boiled eggs; diced
1 large red Delicious apple, cut up, leaving skin on apple pieces;
1 lb. spinach
1 small onion, diced.

Dressing:
1/4 lb. Bleu Cheese, crumbled
1/2 c. Hellmann's mayo
1/2 c sour cream
4 slices crisp bacon, crumbled.

Directions:

Make dressing several hours ahead. When ready to serve, toss salad with dressing and add crumbled bacon on top.
