6 Earns Fresh Corn
1 Red Pepper
1 Sweet Onion
1 Tomato
1/2 Jalapeno
Fresh Cilantro
Olive Oil
Distilled Vinegar
Salt & Pepper

Directions:
Directions:
Boil corn until done, cool. Cut corn of the cob. Small dice tomato, onion, pepper and jalapeno. Mix. Chop fresh cilantro (to me, the more the better). Add olive oil, vinegar, salt and pepper to taste.

For a different flavor try adding black beans or feta cheese. Fun to make and play around with the flavors.
