Ingredients: 1/4 c. butter 2 cloves of garlic crushed 1/2 c. flour 1 tsp salt 2 c. milk 2 c. chicken broth 1 medium onion 1 tsp basil 1/2 tsp oregano 1/4 tsp pepper 24 oz creamed cottage cheese 1 box of lasagna noodles 2 c. cooked chicken cut into bite sized pieces 2 (10oz) frozen spinach thawed and drained 1/2 c of Parmesan

Directions:Melt butter. Add onion and garlic and saute approx. 2 min. Stir flour and salt in. Cook and stir constantly until bubbling. Stir in broth and milk with whisk. Heat to boil. Stir constantly for 2 min. Turn heat to low- medium. Stir in mozzarella and 1/2 c parmesan cheese with wooden spoon. Add spices stir and cook until cheese all melted. Set aside. Mix chicken and spinach together in another bowl. Spread: 1/4 of cheese mixture on un-greased 9 x 13 baking dish. Layer with noodles, cheese mixture, and chicken/ spinach mixture. Finishing with extra layer of mozzarella and/or parmesan mixture. Bake: Uncovered for 35-40min. Keep an eye on it so cheese on top doesn't burn. Enjoy! |

Notes: I use a lot more parmesan cheese than this calls for (at least double). I also often times saute my own bag of baby spinach in butter until wilted. Not to mention bumping up my favorite spices. Using fresh basil is an added bonus too. YUM!
