1 onion, sliced
1 tablespoon butter or other shortening
2 cups diced raw potatoes
1 teaspoon salt
Few grains pepper
1 teaspoon minced parsley
3/4 cup boiling water
1 tablespoon water
2 teaspoons flour

Directions:
Directions:
Cook onion 5 minutes in hot butter in a large skillet.
Add potatoes and a mixture of salt, pepper, and parsley.
Pour in boiling water and cook covered until tender, about 15-20 minutes.
Blend water and flour.
Stir into mixture in skillet, bring to boiling and cook 1 to 2 minutes.
