3 large medium ripe Anjou or Bartlett pears

18 thin slices prosciutto – it's expensive, but buy the best you can afford

freshly squeezed juice from 1 lemon

2 TBS honey

1/3 - ½ cup extra virgin olive oil

Salt & Pepper

1.5 TBS fresh thyme leaves (strip them off the stems)

18 very thin slices sharp Italian grating cheese (1/2" x 4").Parmigiano, Asiago, or Pecorino work well

1 bunch arugula

Wash and dry the arugula. Peel and core the pears and cut each one into six wedges. Make a dressing by whisking the honey, lemon juice and olive oil. Add thyme, salt and pepper. Toss the pears in the dressing. Lay a piece of prosciutto down and put a few arugula leaves across it so it pokes out on the sides. Put a pear wedge and a piece of the cheese on that, drizzle a tiny bit of the dressing on top and a few extra grinds of pepper. Roll up into little bundles and arrange on a plate. Use the extra arugula for garnish.

These are really good and very easy to make. You won't need a lot of salt because the ham is salty.
