2 boxes Jiffy corn muffin mix
2 eggs
2/3 cup sour cream
1 c. finely chopped onion
1 c. grated Cheddar Cheese
1 can creamed corn
Sliced pickled Jalapeños-- optional

Directions:
Directions:
Oil 13x9 pan liberally. Mix all ingredients well except for jalapeños. Pour into pan. Place jalapeños on top of batter-- can do half with and half without for those who don't care for them!
Bake at 400º for 45-50 minutes.
