1 cup sugar
1/2 cup brown sugar
1 egg
1 cup butter (I use 1 cube butter & 1 cube margarine)
1 1/4 cups flour
1 1/4 cups minute oatmeal
3/4 cup shredded coconut
1 tsp. baking powder
1 tsp. baking soda

Directions:
Directions:
Preheat oven to 350º. Combine all ingredients and mix well. Drop teaspoonfuls onto cookie sheet about 2" apart. Bake 12-15 minutes or until golden brown. Let cool a couple of minutes and remove from cookie sheet.

These cookies should be light and crispy, if you underbake them, they will be chewy.
