1 1/2 # beef stew meat
1 medium onion sliced & cut in half
1/2 tsp. garlic pepper (or to taste)
2 T.olive oil
1 large can V-8 reg.vegetable juice
1# bag frozen mixed vegetables
2 potatoes, diced large (optional)
gnocchi - See recipe below

I cut stew meat into bite-size pieces. Brown meat and onion in olive oil(or shortening). Pour in can of V-8 and let simmer on low for about an 45 min. to 1 hour. Add potatoes & mixed vegetables & simmer until potatoes are done. We prefer this soup with gnocchi so I omit the potatoes.
Gnocchi:
3 medium potatoes
2 eggs, beaten
1 1/2 C. flour
Peel, cut up , boil & drain potatoes. Mash potatoes with eggs. Add flour & mix to a dry dough. Turn out onto floured board & knead until smooth (about 2 minutes). Divide into 4 parts. Roll each piece on floured surface into a rope about 3/4" in diameter. Cut into 1" pieces. I give each piece a quick roll in my hands & then gently roll a fork over it to make it look like gnocchi! Bring a pan of water to boil & drop gnocchi in. Do not over crowd. They will drop to bottom & then rise. Boil for about 1 minute after they rise. Remove with slotted spoon & drain. I put them in a Pyrex dish and put a little melted butter on them & stir them around so they don't stick together. We put them into our soup at the table.

Some extra frozen green beans are a good thing!
My mother used to make Polish potato dumplings with raw, grated potatoes..I gave up as my potatoes always turned a weird color after I grated them and switched to gnocchi.
