1/2 c. packed brown sugar
1/3 c. butter or margarine, softened
2 large eggs
1/2 c. whole-wheat flour
1/4 c. all purpose flour
3/4 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
2 apples, peeled, cored and diced
1 cup quick-cooking rolled oats
1/2 c. coarsely chopped walnuts plus more for garnish if desired
1 c. prepared vanilla icing (optional)

Directions:
Directions:
First cream butter and sugars. Then add wet ingredients and beat until fluffy. Mix in the dry ingredients and then the apples and nuts.

Spread mixture in a greased 9 inch pan and bake at 375º for 25 to 30 minutes or until toothpick test comes out clean. After cooling, garnish with frosting and remaining nuts if desired.

Mom and Dad got this recipe from one of the Sister Missionaries in the office. Mom made these modifications when she cooked them, " I use all my own whole wheat flour. I use no brown sugar, no salt, add an additional 1/2 c. nuts, plus 1 c. raisins, minus the icing." They are really good with her modifications as well.
