6 strips thick-sliced bacon, diced
1 c. onion, diced
1 c. Granny Smith apple, cored, diced
1 T. flour
2/3 c. apple cider vinegar
1/3 c. sugar
1/4 c. chicken broth
Salt and pepper to taste
8 c. red cabbage, shredded
1/4 c. chopped fresh parsley

Fry bacon in large saute pan. Pour off all but 1/4 cup of drippings. Add onion and apple to bacon and drippings. Cook over medium heat until softened, about 5 min. Whisk in flour; cook 1-2 minutes. Stir in vinegar, sugar, broth, salt and pepper. Add the cabbage and toss to wilt, 4-5 minutes. Stir in parsley just before serving.
