1 ½ cup Salad oil
3 Eggs
2 cups Sugar (wh9te)
½ tsp Salt
½ tsp Cinnamon
1 cup Crushed pineapple
1 cup Chopped walnuts
2 ½ cups Flour
2 tsp Baking soda
2 tsp Vanilla
1 cup Grated carrots

Directions:
Directions:
Preheat oven to 350 degrees. Beat well the oil, eggs, and sugar. Add flour, soda, salt and cinnamon and blend well. Add vanilla, carrots, crushed pineapple and coconut (shredded), and chopped nuts. Pour into well grated and floured pan. Bake 40 to 50 minutes.



FROSTING
1 cup white sugar, 1 tsp soda, 1 cup butter or margarine (1 cube), ½ cup buttermilk, ½ tsp vanilla. Cook over medium heat 5 minutes. Pour over cake while still hot.
