6 large potatoes
1 ½ teaspoon of Oregano
1 ½ Cups of Cacique Ranchero Style Cheese grated/crumbled
1 ½ teaspoons of Salt
2 cups of Flour
7 Eggs
1 Cup of Olive Oil

Directions:
Directions:
Boil potatoes (add water and boil for 25-30minutes—until soft, test with fork). Let stand until not hot anymore. Peel potatoes and mash them up/puree them with spoon. Add 1 ½ teaspoons of salt. Add the oregano and crumbled cheese to the potato mixture.

Make round tortas (cakes) with potato mixture of approximately 4”inches in size. Coat the tortas (both sides) with flour.

Take eggs and separate yolk and egg whites, set yolks aside. With a mixer, beat/mix the egg whites very well until the egg white is very puffy/frothy (que este bien espumada) then add the egg yolks and about ¼ teaspoon of salt, mix again.

In a skillet, heat oil at medium heat. Dip the tortas in the egg mixture and cook in skillet, pour oil over them, let cook for 2-3 minutes or so until they are puffed up and then turn over. Remove from heat and drain with a paper towel.
