1 med. eggplant, peeled
4 med. tomatoes, peeled
2 med. onions chopped
2 medium gr. pepper, chopped
2 T sugar
salt & pepper
3/4 lb sharp Cheddar Cheese, shredded

Directions:
Directions:
Cut eggplant & tomatoes into 1/4 " slices. In a 13x9 baking dish, layer half the eggplant, tomatoes, onions, peppers, sugar, seasonings to taste and cheese. Repeat layer. Bake, covered, at 400 degrees for 30 min. Reduce temp to 350 degrees, remove cover and bake for another 30 min..

This is a great one to take to those "bring a dish" invites. Works out great to bake ahead of time and then reheat. I never have any leftovers to take home.
