1 Golden Delicious apple, pared, cored and cut in 8 pieces
1 medium onion, chopped coarsely
1 navel orange, with rinds removed, cut in 2 in. pieces
1/2 c. white vinegar
1 c. light brown sugar, packed firmly
1 tsp. cinnamon
1/2 tsp. cumin
1/4 tsp. ground cloves
1 bay leaf
1-12 oz. bag fresh or frozen cranberries (about 3 cups)
1/2 c. dried currants.

Directions:
Directions:
In food processor, chop apple, onion and orange; set aside. In Dutch oven or deep pot, combine vinegar, sugar, spices and bay leaf; bring to boil. Add chopped fruit and onion mixture, cranberries and currants. Reduce heat and simmer until cranberries are soft, about 30 min. Let cool. Pour into plastic container; cover and refrigerate until ready to use. Makes 4 cups. Keeps 2 weeks in refrigerator.
