1 (16-oz.) pkg. dried black-eyed peas
3 c. water
1 (14-oz.) can chicken broth
1 pkg. dry Italian salad dressing mix
1 tsp. ground red pepper
3 to 4 T. canola or olive oil

Directions:
Directions:
Soak peas in 6 to 8 cups of water for 1 to 2 hours. Drain, rinse and sort. Place peas in a large saucepan with 3 cups water, broth, dressing mix, red pepper and oil. Bring to a boil and reduce heat. Simmer covered with lid tilted for 1 to 2 hours or until peas are tender. If needed, add more water or broth. Serve over rice.
