1 c. cracked bulgar wheat
2 c. very hot water
1-3/4 c. (14-1/2 oz. can) whole peeled tomatoes and juice
1/2 c. chopped celery
1/2 c. sliced green onions
1/2 c. sliced ripe olives
1/2 c. chopped fresh parsley
1/4 c. chopped fresh mint
1/4 c. olive oil
1/4 c. lemon juice
1/2 tsp. salt
1/4 tsp. pepper.

Soak wheat in hot water for one hour. Drain thoroughly, pressing out excess water. Place wheat in bowl. Cut up tomatoes; add tomatoes and juice and remaining ingredients to wheat. Mix thoroughly. Chill at least 2 hours before serving.
