Dressing:
1 t. finely chopped, peeled, fresh ginger
1-3 garlic cloves, pressed
1/4 C. rice vinegar or white wine vinegar
1/4 C. orange juice
1/4 C. vegetable oil
1 t. sesame oil
1 envelope onion soup mix
2 t. sugar

Salad
8 oz uncooked bowtie pasta
1cucumber, cut into slices, then into fourths
1 red bell pepper, diced
1/2 C. chopped red pepper
1 pkg fresh baby spinach
2 C. cooked, diced chicken
1/2 C. sliced almonds

Directions:
Directions:
Place all dressing ingredients into a food processor or blender and blend. Cover and refrigerate until ready to use.

Cook noodles, drain, cool. Cook chicken, cool, dice. Place cooked noodles, cooked, diced chicken and all chopped vegetables EXCEPT SPINACH into a bowl. Mix together. Pour dressing over salad mix and toss. Refrigerate when ready to use. When ready to serve mix in spinach OR place tossed salad over a bed of spinach and serve.

Yummy and great for a party or shower. Putting the spinach in the salad before it's ready to eat will make the spinach very soggy. Wait until ready to serve to add spinach.
