Red onions sliced ¾ of an inch thick
Romaine lettuce cut in half lengthways
Corn - on the cob
Assorted bell peppers halved, stemmed and seeded
Jalapeno peppers halved, stemmed and seeded
1-2 heads of garlic roasted ahead of time
1-2 limes
Cilantro
2-3 T of capers
Olive oil
Sea salt
Black pepper

Directions:
Directions:
Rub everything with oil.
Grill on high heat. (BBQ is best because you want burned bits and grill marks). Start with the corn and do romaine last.
Cut kernels from corn.
Roughly chop everything else.
Add capers
Add roasted garlic cloves whole.
Toss all in a large bowl with lime juice.
sea salt and pepper to taste.
Garnish with cilantro.

1/2 small head of lettuce per person. Everything should be a little crunchy when served except the garlic and capers.
