1 bag 15-bean soup (dried bean mix found in the soup aisle)
1 small red pepper
Couple stalks of celery
Couple carrot sticks
1 onion
1 can diced tomatoes
1 tablespoon lemon juice
1 tablespoon Worcestershire
Course ground black pepper
2 teaspoons dried Italian seasoning (I’m unsure on amounts – I just throw it in. Fresh spices are best and then I use a lot – focus on sage, thyme, rosemary and basil)
1 bay leaf

Rinse beans and then follow directions on bag for cooking – either soak overnight or simmer them for several hours (I do the latter). Chop veggies and add them and the seasonings to pot. Simmer for a couple hours or until veggies are tender. Top generously with fresh, grated Parmesan cheese. If you are a meat-eater, add your choice of meat such as fresh ham or turkey. I just made a batch with leftover turkey (from a real turkey I roasted) and it was excellent. My mom cooks her bean soup with a ham bone. (Also note that the bean mix comes with a seasoning packet which I throw out.)
