2 lbs tripe
6 garlic cloves (mashed)
1- 14.5 oz can of hominy
1 tsp cumin
4 Tbs chili powder
1Tbs oregano
salt / pepper

Directions:
Directions:
Wash & remove fat from tripe and cut into bite size pieces. Cook with 2 or 3 tsp. of salt in enough water to cover tripe, for 2 hours or until tripe is tender. Then add remaining ingredients and simmer for 10 minutes.

Serve with tortillas, topped with chopped onions and a drop of lemon juice.
