1 package yeast
1 c luke warm water
1 tbls sugar
1 tsp salt
2 1/2 - 3 c flour
2 tbls olive oil

Sauce:
1/2 pound sliced and sautéed mushrooms
1 pound sausage
1 tsp EACH onion powder, garlic powder and oregano
1 pound can tomatoes
6 oz can tomato sauce

Cheese Filling:
1/4 pound grated mozzarella
1 pound cottage cheese
2 tbls chopped parsley
2 eggs, beaten

Directions:
Directions:
Dump package of yeast into water. Set aside until bubble form.
Meanwhile, mix 2 1/2 cups flour, sugar and salt in a mixing bowl. Add oil and bubbled yeast. Mix until a soft dough forms. Kneed until smooth, adding more flour as needed. Place in an oiled bowl and allow to rise in warm spot for about an hour (until doubled in size).

For Sauce:
Brown sausage and then add remaining ingredients and simmer for 15 minutes.

For Cheese Filling:
Mix all ingredients well.

Preheat oven to 350º. Grease 9x13 pan. Divide dough in half and roll out each piece to fit pan. Place 1 of dough pieces in pan. Spread cheese mix on top. Place 2nd piece of dough on top of cheese filling. Dump sauce mix on top of dough.
Bake for 20 minutes or until cheese is melted and bubbly and bottom dough is starting to brown. Top with shredded mozzarella and bake an additional 5-7 minutes or until cheese is melted.
