2 c sifter flour
1 tsp salt
1 1/4 tsp baking soda
3/4 tsp baking powder
2 eggs beaten lightly
2 c buttermilk
1/4 c melted (and cooled) butter

Directions:
Directions:
Sift dry ingredients together. Add remaining ingredients and stir lightly to moisten. Mixture will be think and lumpy. (Add 1/4 to 1/2 water to batter to thin if you want more of a "flap-jack" style.)
Drop by spoonfuls on lightly greased griddle. Cook until golden, turn, cook until done.

I try to resist turning the first time until I see a large amount of bubble starting to form. You can also use this as a waffle batter (do not thin in this case). Since my daughter and I never finish a whie batch, I butter the remaining ones as they come out of the pan and then put in a covered dish in the fridge. She then reheats them for breakfast before school.
