3 to 4 medium sweet potatoes
4 thick center cut pork chops
Salt and pepper to taste
All-purpose flour
2 T. butter, melted
1/2 c. currant jelly
1/2 c. orange juice
1 T. lemon juice
Rind of 1 lemon, grated
1 t. dry mustard
1 t.paprika
1/2 t. ground ginger

Directions:
Directions:
Preheat oven to 350º. Boil and slice sweet potatoes. Salt and pepper chops, dredge in flour, and brown on both sides.
Melt butter in small saucepan. Stir in jelly, juices, and lemon rind. Add remaining ingredients, stirring to blend.
Arrange sweet potatoes and chops in shallow casserole and cover with 3/4 c. sauce.
Bake, uncovered, at 350º for 30 to 40 minutes, basting occasionally with remaining sauce.
