2 T. butter
1/4 cup chopped onion
1/4 cup chopped yellow or orange pepper
2 T. flour
1/2 tsp. salt
1/8 tsp. pepper
1 cup milk
1 - 8 oz. carton Neufchatel cheese dip with bacon and horseradish
4 cups cubed potatoes, cooked, drained
1 - 4 oz. jar pimientos, chopped
1 1/2 cup soft breadcrumbs
1 T. snipped parsley
1 tsp. sesame seeds
4 T. butter, melted

Preheat oven to 375ºF. In medium skillet, melt 2 T. butter. Add onion and yellow or orange pepper. Cook over medium-high heat, stirring occasionally, until tender. Blend in flour, salt and pepper. Add milk. Stir constantly over medium-high heat until mixture thickens and bubbles. Stir in Neufchatel cheese dip until blended. Pour over potatoes and pimientos in an ungreased 1 1/2 qt. oblong baking dish.

In a small bowl, mix breadcrumbs, parsley, sesame seeds and 4 T. melted butter. Sprinkle mixture over potatoes. Bake 30 - 35 minutes or until heated through.
