6 T. butter
4 T. canola or vegetable oil
2 T. minced green onion
2 - 3 T. minced garlic
4 tsp. lemon juice
1/2 tsp. sea salt
1 1/2 - 2 # medium-size raw shrimp, shelled and deveined
1/2 tsp. grated lemon or orange peel
4 T. minced parsley
Dash liquid hot pepper seasoning, if desired
Lemon wedges

Homemade Noodles:

3 eggs, beaten
4 T. milk or water
1 tsp. salt
2 - 2 1/2 cups flour

Heat wok or large saute pan on medium-high setting. When pan is hot, add butter and oil. When butter has melted, add onion, garlic, lemon juice and salt. Stir fry until onion is limp (about 30 seconds). Add shrimp and stir-fry until shrimp turn pink ( 1 - 3 minutes). Stir in lemon or orange peel, parsley and hot pepper seasoning, if desired.

Homemade Noodles:

Combine beaten eggs, milk or water and sea salt. Add enough flour to make stiff dough, about 2 - 2 1/2 cups. Roll dough very thin on floured surface; let stand 20 minutes. Roll up loosely, slice 1/4" wide; unroll, spread out and let dry at least 2 hours.

Drop in boiling, salted water and cook uncovered 10 minutes. Makes 6 cups of noodles.

OR

Purchase (2) packages of fresh noodles and follow directions for cooking.

Place the noodles in a large serving bowl and top with scampi mixture. Garnish with lemon wedges and a sprinkle of parsley.

In lieu of making noodles by hand I have used my pasta maker for years. So much easier and faster. If you have a pasta maker follow the directions for a double batch.
