2 lbs sweet potatoes
3 or 4 shallots peeled & chunked
¼ C olive oil
3 T balsamic vinegar

Peel the sweet potatoes and cut into chunks
Add shallots in roasting dish & sprinkle with olive oil & vinegar
Salt & pepper to taste

Bake at 375 until tender (45min)
